“Buttermilk” 這個東西,中文名稱是「酪漿」或「酪乳」,是一種帶酸味的脫脂奶,美國 人喜歡用來製造克戟(他們稱做 “pancake”),香港人則很少接觸到。此物本來是攪打牛奶或奶油成牛油剩餘的液體,但現時在市面買到的buttermilk,一般是以脫脂奶加工變酸的製成品。我對它感到好奇,想試用來製點什麼,於是挑了一隻Buttermilk Fruit Cake (酪漿果子蛋糕)試製。

這隻「蛋糕」不用雞蛋,材料是:(1)一杯半麵料、三分之二杯砂糖、一茶匙發粉、少許細鹽、玉桂粉、多香果粉(allspice)、肉豆蔻(nutmeg)粉末各一茶匙;(2)棗肉(剁碎)、杏脯(剁碎)提子乾各半杯;(3)牛油(溶化)8湯匙、酪漿(暖和)一杯。 製法如下:將第(1)部分的材料篩勻,再將第(3)部分材料慢慢倒入拌和,最後加入第(2)部分的材料拌匀,放進約9X5吋的長方形餅模子之內,以325℉溫度,在焗爐烤約50分鐘即成。

說來只是1,2,3那麼簡單,但在3步曲之前有一堆準備工夫要做,包括用牛油紙墊好餅模子內部,抹上牛油,以及取麵粉分量的一部分與棗、杏混合剁碎。棗脯和杏脯都是很黏的東西,剁起來麻煩,混合了麵粉就容易得多了。 這隻蛋糕不大發高,平平扁扁,柔軟而滿溢著果子和香料的味道,不太甜。酪漿起的是甚麼作用,我仍不大了了,但有東西吃,味道不俗,也就算了。 .

Ayurveda’s three main focuses: HEALING, PREVENTION and HEALTH CARE.

  • Ayurveda is a method of personalizing food for individuals healing process.
  • Ayurvedic style of cooking is a rational way to prepare food according to the dietary need of an individual based on different body types.

Ayurveda categorizes food into: Sattvik, Rajasic  and Tamasic. These types of food have different effects on body and mind.
